Ginger Cauliflower Soup
Ingredients:- 3 Tablespoons olive oil
- 1 medium onion pealed and chopped
- 1 Tablespoon fresh ginger sliced
- 4 cloves garlic chopped
- 1 teaspoon ground cumin
- 2 teaspoons ground coriander
- 1/4 teaspoon ground turmeric
- 1/8 teaspoon cayenne {optional}
- 2 medium potatoes peeled and diced
- 1/2 pound cauliflower florets
- 5 cups vegetable broth
- 2/3 cup 1/2 and 1/2 {optional}
How to make it:- Heat oil in a large pot and cook onion, ginger and garlic for a few minutes.
- add spices stir then add vegetables and broth.
- Boil slowly for 10 minutes covered or until potatoes are tender.
- Blend in blender or pot.
- Add cream if desired and reheat.
