How to make it:

  2. In a mixing bowl, dissolve yeast in warm water.
  3. add soy milk, oil, sugar, egg, salt and 2 cups flour
  4. beat until smooth.
  5. Add enough remaining flour to form a soft dough (do not knead).
  6. Cover and let rise in a warm place until doubled, about 1 hour.
  7. Meanwhile in a skillet cook the turkey sausage and onion over medium heat until sausage is no longer pink then drain.
  8. Add beaten eggs, milk and seasoning.
  9. Cook and stir until eggs are completely set.
  10. Sprinkle with cheese, keep warm.
  11. Punch dough down, it will require a little more spelt flour to roll in so you can handle it easily
  12. divide into 14 pieces.
  13. On a floured surface roll out dough into 7' circles.
  14. Top each with about 1/3 cup filling;
  15. Fold dough over filling and pinch the edges to seal. Place on greased baking sheets.
  16. Bake at 350 for 15-20 minutes or until golden brown.
  17. Freeze after baking in sandwich size ziplocs.
  18. Then several together in large freezer ziploc.
  19. Thaw and reheat.
  20. I usually thaw in micro wave 30 seconds, turn, 30 seconds and bake in preheated oven about 350 for 2 or 3 minutes to dry the crust.
