Red Pepper Ketchup

Rediscover ketchup, far superior than the corn syrup supermarket versions...roasted red pepper is a great B substitute for tomatoes!
Ingredients:- 28-32 oz jar(s) of Roasted Red Peppers, drained
- 1 Red Onion, chopped
- 2 Small Pears, peeled, cored and chopped
- 1 Dried Ancho or Pastilla Chili, split and chopped
- 1/2 cup Apple Cider Vinegar
- 1/3 cup Red Wine or Red Wine Vinegar
- 1 TB Fennel Seeds
- 1 1/2 tsp Cumin
- 6 TB Sugar
- 1 tsp Molasses
- 1 Bay Leaf
- 2 Whole Garlic Cloves
- 1 tsp Salt
How to make it:- Put all ingredients in a stock pot, and cook on medium for half an hour. Remove bay leaf and puree ingredients in a blender or food processor. Bottle or freeze.
