Red Pepper Ketchup

Description:

Rediscover ketchup, far superior than the corn syrup supermarket versions...roasted red pepper is a great B substitute for tomatoes!

Ingredients:
  • 28-32 oz jar(s) of Roasted Red Peppers, drained
  • 1 Red Onion, chopped
  • 2 Small Pears, peeled, cored and chopped
  • 1 Dried Ancho or Pastilla Chili, split and chopped
  • 1/2 cup Apple Cider Vinegar
  • 1/3 cup Red Wine or Red Wine Vinegar
  • 1 TB Fennel Seeds
  • 1 1/2 tsp Cumin
  • 6 TB Sugar
  • 1 tsp Molasses
  • 1 Bay Leaf
  • 2 Whole Garlic Cloves
  • 1 tsp Salt
How to make it:
  1. Put all ingredients in a stock pot, and cook on medium for half an hour. Remove bay leaf and puree ingredients in a blender or food processor. Bottle or freeze.
