Lentil soup

Great winter warmer

Ingredients:
  • 1 packet red lentils washed
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 onion chopped
  • 1 litre vegetable or chicken stock
  • 1 tablespoon olive oil
How to make it:
  1. heat oil in large pan
  2. add onion,carrot and celery,
  3. cook till onion clear, stirring occasionally,
  4. add washed lentils and stock,
  5. cook for 15 minutes or till veg soft,
  6. blend in blender or stabbing mixer till smooth.
