Tofu Egg Salad

Description:

This combination looks and tastes like real egg salad. Use it the same way - as sandwich filler or on a bed of lettuce and garnished with tomatoes and cucumbers.

Ingredients:
  • half pound tofu
  • 1 scallion chopped
  • half cucumber, diced
  • 2 Tablespoons mayonnaise
  • 1 Tablespoon tahini
  • 1 Tablespoon prepared mustard
  • dash salt
  • dash pepper
  • dash garlic powder
How to make it:
  1. YIELDS: 2 cups
  2. In a small bowl, mash tofu with fork.
  3. Add chopped vegetables, mayo, tahini, mustard, and seasonings.
  4. Mix well with spoon.
  5. Serve cold.
