Tofu Egg Salad
Description:
This combination looks and tastes like real egg salad. Use it the same way - as sandwich filler or on a bed of lettuce and garnished with tomatoes and cucumbers.
Ingredients:- half pound tofu
- 1 scallion chopped
- half cucumber, diced
- 2 Tablespoons mayonnaise
- 1 Tablespoon tahini
- 1 Tablespoon prepared mustard
- dash salt
- dash pepper
- dash garlic powder
How to make it:- YIELDS: 2 cups
- In a small bowl, mash tofu with fork.
- Add chopped vegetables, mayo, tahini, mustard, and seasonings.
- Mix well with spoon.
- Serve cold.
