Turkey Lentil Stew

A stew-like soup to warm your tummy-tunket!

Ingredients:
  • 2 cups turkey stock (I make mine)
  • 1/2 cup water
  • 1 cup cooked turkey
  • 1/2 cup dry lentils
  • 1/4 cup dry barley
  • 1 sprig fresh thyme
  • 2 leaves fresh parsley
  • 1/4 chopped red onion
  • 1 Tbs. minced garlic
  • 1/4 tsp. cumin
  • 3 cut carrots
  • 3 cut celery stalks
  • 1 chopped leek
  • 2 cups Swiss chard
How to make it:
  1. Bring to a boil stock, water, turkey, lentils, barley, thyme, parsley, onion, garlic and cumin. Lower cooking level to a simmer for about 30 minutes. (I like to use a small crock pot to really let the flavors combine.) When beans are somewhat tender add in cut carrots and leek. Simmer for another 30 minutes until beans, barley and veggies are tender. Add Swiss chard. Cover and simmer another 5-10 minutes until chard is tender.
  2. I made this smaller amount just for me about 3 servings. You may need to make a larger amount if you have more than one B or AB eating.
