Chicken Salad Wraps

Description:

Refreshing and filling sandwich wraps you can take anywhere.

Ingredients:
  • 3/4 pound cooked, cubed chicken [or turkey]
  • 1-1/2 stalks celery, diced
  • 2 stalks fennel, diced
  • 2 green onions finely chopped
  • 1/2 cucumber, diced
  • 4 ounces green olives, sliced
  • 1 teaspoon fresh thyme
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon dried dill weed
  • MISO Dressing

  • 4-1/2 tablespoons light miso
  • 4-1/2 tablespoons agave
  • 3 tablespoons lemon juice
  • 2-1/2 tablespoons dry mustard
How to make it:
  1. Mix together salad ingredients
  2. Make dressing and add 1/2 cup of Miso Dressing to salad.
  3. Mix well.
  4. Wrap in tortilla or compatible wrap with a large romaine lettuce leaf.
