Katerbean's Almond Cookies

Ingredients:
  • 1 cup almonds, ground to flour [or use a BTD compliant substitute]
  • 1 cup spelt flour, whole grain or unbleached [or use a BTD compliant substitute]
  • 1 cup oats, ground to flour [or use a BTD compliant substitute]
  • 1/2 cup maple syrup [or use a BTD compliant substitute]
  • 1/2 cup olive oil
  • compliant jam (blueberry, apricot)
How to make it:
  1. Mix first 5 ingredients.
  2. Roll into walnut sized balls.
  3. Either flatten them on a cookie sheet and leave them plain, or put an indention in them with your thumb and put some jam in the indention.
  4. Bake at 350 degrees for 10 to 15 minutes until golden.
