Black Bean and Turkey Chili

Description:

Delicious, low-fat, versatile. Can be prepared as a vegetarian dish. Dress with condiments if desired, depending upon your blood type: cheese, sour cream, chips, black olives, green onion, lime juice, cilantro, avocado or chopped tomato.

Ingredients:
  • 1 cup chopped onions
  • 1 teaspoon garlic (or 3-4 cloves, minced)
  • 1 can chopped green chilies (4 ounces)
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon cayenne pepper
  • 1 teaspoon sea salt
  • 1 cup vegetable broth (chicken is fine, too)
  • 4 cups of black beans (2 cups dried, rehydrated) or 2 cans, drained [or use a BTD compliant substitute]
  • 2 cups diced cooked, turkey
    Note:
    Of course chicken may be used in place of turkey. For a spicier dish, substitute jalapeno for green chilies, depending upon taste. White beans (cannellini) can be substituted for black beans-then it's called 'White Chicken/Turkey Chili'
How to make it:
  1. Saute onion and garlic with spices.
  2. Add broth, half of beans and turkey.
  3. Mash remaining beans (easier if you put them through the blender with a little liquid).
  4. Add beans to pot.
  5. Bring to boil.
  6. Simmer 20-25 minutes
    Note:
    I like to make it in the morning and keep it warm in the crock pot for one of those crazy nights when our busy family is going in different directions.
