Healthy Battered Chicken

This is a great way to enjoy whatever your favorite cuts of chicken may be; drumstick, thigh, or breast. The muffin mix keeps it juicy and tastes great!

  • Chicken pieces (remove skin)
  • Bran muffin mix (I add flax to it)
  • Seasonings to preferences (garlic powder, salt, pepper, etc)
  • Low fat milk (optional or use juice)
How to make it:
  1. Remove skin from chicken
  2. Mix bran muffin mix and seasonings in container
  3. Dip chicken in milk, cover with muffin mix
  4. Cover a baking tray with foil and spray with a non-stick aerosol
  5. Put chicken pieces on tray
  6. Put tray in oven and bake at 350 for 45 minutes
