Turkey Sesame Noodles

Description:

This recipe is a great way to use up leftover turkey. White or dark meat (or a mix of both) may be used, but I prefer dark meat as it's more moist and flavorful.

Ingredients:
  • FOR THE SAUCE:
  • 6 Tablespoons nut butter (tahini, peanut, almond, etc)
  • 5 Tablespoons wheat-free tamari sauce
  • 1 1/2 tablespoons sweetener of choice
  • 1 Tablespoon warm water
  • 1 Tablespoon sesame oil
  • 1 Tablespoon rice vinegar OR lemon juice
  • 1/4 cup chopped fresh ginger
  • 2 cloves garlic, chopped
    FOR THE MAIN DISH:
  • 1/2 lb rice noodles or rice pasta
  • 1 Tablespoon sesame oil
  • 1/2 lb cooked and finely shredded turkey
  • 1/4 English cucumber OR firm crunchy vegetable such as kohlrabi, peeled and cut in slivers
  • 1/2 red pepper, diced OR 1 medium carrot, shredded
  • 10 snow peas, thinly sliced across diagonally
  • 3/4 cup sprouts of choice
How to make it:
  1. Put all the ingredients for the sauce into a blender or mini food processor and whiz until smooth.
  2. Cook the pasta or rice noodles.
  3. Drain, rinse and toss with the sesame oil and turkey.
  4. Add the sauce and mix until evenly combined.
  5. Top with the crunchy vegetables and serve immediately.
  6. Serves 4.
