Explorer Rack of Lamb over apples

Rack of lamb is expensive, I know, but still it's just so good you have to have it once in a while!

  • 1 rack of lamb 1 1/2 pounds
  • Ghee
  • 2 cooking apples - Gravestein or Pippin
  • lemon juice
  • 1-2 teaspoon honey
How to make it:
  1. Preheat oven to 400
  2. Peel, core and slice the apples
  3. Toss with a little lemon juice
  4. place in a mound in the bottom of a 13x9x2 baking pan
  5. Dot or drizzle the honey on top of the apples
  6. In a large fry pan brown the meat side of the rack until golden brown, in the ghee
  7. Place the rack on the mound of apples, meat side up and cook for 20 - 30 minutes
  8. Slice and serve with cooked apples
