Pinto bean tostadas

Pinto beans on tostadas with goat cheese, cucumber and lettuce. Great breakfast and easy to have ready in a few minutes

  • 2 cup organic pinto beans
  • organic onions
  • organic garlic
  • cumin
  • sea salt
  • cayenne
  • organic, cold-pressed olive oil
  • organic sprouted corn tortillas
  • Toppings
  • goat cheese
  • organic romaine lettuce
  • organic cucumber
  • organic avocado
  • hot sauce
How to make it:
  1. Pressure cook the pinto beans.
  2. In a cast iron pan, put olive oil.
  3. Add onions and garlic.
  4. Saute until onions are translucent.
  5. Add cumin, cayenne, dash of salt and beans.
  6. Saute until flavors fuse.
  7. In a separate pan, use olive oil to fry the tostadas.
  8. Let drain on paper towels to remove excess oil.
  9. Place a helping spoonful of pinto beans (which can be mashed if you like) on top of the tostada.
  10. Add a bit of goat cheese, a dash of hot sauce, cucumber, avocado and romaine lettuce.
  11. Delicious and filling breakfast. Yum!
