Egg Pita with carmelized onion and feta.
How to make it:
- Butter or ghee
- Pita pocket
- Slice onion into 1/4 inch thick slices.
- Heat butter or ghee in heavy skillet and add onions, stirring often.
- Cook until a caramel color, could take about 30 minutes.
- Scramble eggs and cook.
- Slice pita and stuff with eggs, caramelized onion and feta cheese.
