Peanut Butter & Coffee Curry
Description:
This is a delicious Asian/Indian curry that goes well over Basmati rice. Perfect for A types. Simmer a long time for a rich flavor. Even better the next day.
Ingredients:- 1 cup green peas
- 1 cup firm tofu squares
- 1/4 cup peanut butter
- 1/2 cup strong coffee
- 1 cup chopped onions
- 2-4 cloves garlic
- 1/2 teaspoon cumin
- 1 teaspoon curry
- 1/4 teaspoon cardamom
- 2 tablespoons honey (or molasses for less sweet)
- 1 cup soy milk
- 2-3 tablespoons olive oil
How to make it:- Saute onions and garlic with olive oil until lightly browned.
- Add remaining ingredients.
- Mix and let simmer for one hour or more, stirring occasionally.
- Add salt or soy sauce to taste.
- Simmer uncovered to thicken.
- Serve over rice.
