Peanut Butter & Coffee Curry

Description:

This is a delicious Asian/Indian curry that goes well over Basmati rice. Perfect for A types. Simmer a long time for a rich flavor. Even better the next day.

Ingredients:
  • 1 cup green peas
  • 1 cup firm tofu squares
  • 1/4 cup peanut butter
  • 1/2 cup strong coffee
  • 1 cup chopped onions
  • 2-4 cloves garlic
  • 1/2 teaspoon cumin
  • 1 teaspoon curry
  • 1/4 teaspoon cardamom
  • 2 tablespoons honey (or molasses for less sweet)
  • 1 cup soy milk
  • 2-3 tablespoons olive oil
How to make it:
  1. Saute onions and garlic with olive oil until lightly browned.
  2. Add remaining ingredients.
  3. Mix and let simmer for one hour or more, stirring occasionally.
  4. Add salt or soy sauce to taste.
  5. Simmer uncovered to thicken.
  6. Serve over rice.
