Based on one of my Mom's recipes, this is something that can be easily adjusted to suit just about anyone! (Lots of superfoods for teachers and gatherers, if you are following the GTD.)

  • 2 cups cooked brown rice (or other compliant rice)
  • 1 tin sockeye salmon, with juice, or equivalent cooked fillet
  • 2 Tablespoons melted ghee
  • 2 Tablespoons lemon juice (juice of one lemon, or more to taste)
  • 2 eggs
  • sea salt to taste
How to make it:
  1. Flake the salmon (and juice, if using canned) with a fork and mix evenly with the cooked rice in a glass baking dish with a lid.
  2. Beat the eggs with a fork, stir in lemon juice and melted ghee, and then stir that into the rice and salmon mixture.
  3. Mix well.
  4. Cover and bake at 350 for one hour.
    This recipe is very easy to adjust. I make mine with more rice, and I make my O gatherer husband's with less rice (basmati) and double the salmon. Different grains can be used. I've used other oils also. Just make sure that when you mix it all together, it is quite wet and gooey, otherwise it will dry out. Add another egg or more oil/ghee if it is too dry. I've also made this with black beans in place of the salmon, with curry type spices and lime juice instead of lemon. It needs more liquid, but is also delicious. Salmon loaf is GREAT leftover, hot or cold. Makes a nice breakfast. :-)
