Trout with Sour Cream Cucumber Sauce

Ingredients:
  • 1/2 cup grated, peeled cucumber
  • 1/2 cup sour cream
  • 1/2 cup plain yogurt
  • 1/2 tsp. grated lemon rind
  • 2 tsps. lemon juice
  • 1/2 tsp. dill
  • 1/8 tsp. salt
  • 4 rainbow trout fillets (6 oz. each)
How to make it:
  1. Combine cucumber, sour cream, yogurt, lemon rind, lemon juice and dill in a bowl; set aside. Sprinkle salt over trout; place trout on a broiler pan lightly coated with olive oil. Broil 8 minutes or until fish flakes when tested with a fork. Spoon 1/4 cup of sauce over each fish fillet.
