Blueberry-Lavender Compote

This is a delicious dessert that can be eaten alone (it's great chilled as a refreshing summertime fruit soup) or as a sauce for rice pudding, cheesecake, and so on. Make sure you use food-grade or mild sweet lavender. (Lavandula angustifolia or English lavender works well.) Blueberry concentrate can successfully be substituted for the sweetener--use 1/4-1/3 cup instead of 1/2 cup, or to taste. You can also make the recipe without sweetener and, after it is done cooking, add in agave nectar to taste. Watch the berries as they cook so they don't scorch.

  • 2 pints fresh blueberries
  • 1/4 cup fresh lemon or lime juice
  • 1/2 cup evaporated cane juice (or sweetener of choice, to taste)
  • 1 teaspoon lavender flowers
  • 1 teaspoon white rice flour or preferred thickener
  • 1/4 teaspoon sea salt
How to make it:
  1. In a saucepan large enough to hold the berries, stir together lemon or lime juice, sweetener, thickener, and salt.
  2. Add the blueberries and lavender.
  3. Cook over medium heat until the berries begin to release their juices and the mixture thickens, a matter of a few minutes.
