I guess one of your concern is that egg yolk contains too much cholesterol. It does, but I've read somewhere that about 85% of the cholesterol in our system is manufactured from within, not thru' food. Maybe I'm biased, or I believe too much in those books like Sugar Blues, The Zone, etc. I really think that if one's insulin sensitivity is good, good health doesn't seem that hard to achieve. Saturated fats decrease insulin sensitivity. Harmful lectins agglutinating blood...will they??
