In Response To: collard green recipes-please (Teri Nelson)
I enjoy the greens sliced thin, stir-fried briefly in the water on the leaves from washing, a little olive oil and chopped garlic to taste. When they begin to wilt I can determine if I need to add more greens to get the amount I need. I then add a tbls. or so of raisins, and a dash of basalmic vinegar and steam with a lid on until done. I like them better not over-cooked. I'm an O so I no longer use the vinegar and have substituted lemon juice after they are cooked. The pan may need a little extra water without the vinegar to moisten. Enjoy your greens! Anne
