When I cook collards, I wash the leaves, place
them on top of one another, then slice them
VERY thinly. I used to use rice vinegar on them,
but I guess I'll have to switch to lemon. Make sure
you steam them long enough so they are tender. I
grow my own (they are very hardy) and can then
harvest the more tender leaves to cook.
