I beleive Whole Foods sells cruelty free veal. I will ask next time I shop to be sure. Asfor a decent recipe for veal try: for 1lb.veal Season w. salt if desired after pounding -Dredge in Spelt flour -Heat 1 T. olive oil& 1T. butter high heat -Cook veal in batches,brown quickly,30-60secs. ea. side -keep warm in oven...meanwhile... -Add 1/4c. dry white wine & 1/3c. lemon juice to pan. Bring to boil scraping up brown bits. -Reduce heat& simmer about 5 min. until slightly thickened. -Turn off heat& wisk in 4T. of butter -Season w. salt & 2T. or more fresh parsley. -Spoon over veal You could omit or reduce butter& add a touch of cayenne pepper if desired. You basically have Veal Picatta here. YUMMMMM!!!!!
