Oh...what do I do with veal?

Being a new type O starting the diet, I (reluctantly) cooked a piece of veal scallopini for dinner.
I sauteed it with olive oil and onions in an effort to give it some flavour.
The end result was one level below mediocre.
Does anyone have a good, fast recipe (osso bucco is a little time-consuming for a weeknight)to make
this HB meat palatable? I appreciate any suggestions.
I searched the recipe board and couldn't find anything.
