My favorite way to eat collards is this: Saute chopped onions and garlic in olive oil until translucent. Then add chopped red or green pepper and saute for a little longer. Then add chopped collards (I use frozen in the winter, fresh in the summer) and cook until everything is warmed through (if using fresh collards, cook until wilted). I add some salt and lemon juice before serving. It makes a pretty dish as well as a tasty one.
