Spring wheat is one of the classes of wheat. Wheat classes include hard red winter wheat, hard red spring wheat, white wheat, soft red winter wheat and durum wheat. Historically there have been subclasses of some of these major classes. Classes differ in things like moisture content, protein content and baking characteristics. There are also different varieties within the classes of wheat.
