In Response To: Semolina -Durum Wheat? (Richard Karasik)
When grinding durum wheat several "passes" or grinding steps are required. Semolina comes from the first pass. Durum flour is produced after several more passes have occurred. Perhaps there is something in the processing where you get more of the bran or a certain portion of the grain in durum flour, rather than in the semolina.
