This weekend, I tried substituting cream of rice cereal
for cornmeal in several recipes. I am not going to post
them because they are still fairly experimental, but I
thought I would pass this idea along.

I made some passable corn muffins and some garlic cheese
grits that would fool the experts. Of course I made the
other substitutions necessary for my type O diet (cream
of tarter and baking soda for the baking powder, no milk,
farmer's cheese instead of swiss). You can use garlic-cheese
grits instead of polenta in any polenta recipe. It also
approximates gnocchi fairly well if you make it a little
thicker and cut it somehow.

Life is good if you don't have to eat out.
