Type O lunches for school kids - 1 a vegie

This book has been wonderful for me and I'm now phasing my two older kids onto the type O diet (I still need to type the younger ones). My biggest challenge right now is what to send the kids for lunch at school. The extra challenge is that my 16 year old daughter has been a lifelong vegetarian (I was for almost 20 years) and is not willing to change that at this point but is very open to seeing where this goes for her. What will supply her protein requirements and\or how do we cover the lunch question in this situation?
