Do lectins ever change chemically?

Do lectins ever change chemically? It seems to me that proteins are always falling apart or being changed by other chemicals. Why not lectins? Is there possibly a way we could disable them by, say, eating a specific combination of foods? Surely they don't stay intact forever.
