Corn-free baking powder
Posted By: Kathy K Date: December-15, 1997 at 19:07:55
Just have to tell all you O's, B's, and AB's out there: I tried Joan's recipe for cornstarch-free baking powder (see Recipe Exchange), and it's wonderful! I made it slightly differently, adding 1/4 t. of arrowroot to the mix (based on Joan's presumption that regular baking powder may be as much as one-quarter cornstarch), so that the resultant mix could be used 1:1 in recipes calling for baking powder. The first thing I made was (spelt) biscuits, and they were the best we've ever had. Light and flaky, and they even tasted better than usual--the commercial stuff (even without aluminum) must have other nasty stuff in it. Kathy
