That is basically it! Just cover the bones with water and cook, as it evaporates, keep adding more. I think overall, before and after adding onions and garlic, the time was about five hours. Keep the heat on simmer or low-medium. When adding the onions, garlic, and barley (half cup), I also took the bones out at that time, and took off remaining meat and added it back to the stock. Then cooked for another hour and a half.
