In Response To: Nitrates Safe ? New Task Force Study (Walter Derzko)
Although the article says that one can either order the report or visit the website, I did not find the original report at the CAST website which is at: http://www.netins.net/showcase/cast/ I also did not find the original report among the list of registered research accessible through the UW-Madison website. http://www.wisc.edu As with many a publicist's summary, the tendency is to move from the specific to the general without keeping in all the intervening steps, so I would rather look over the original article. One thought to ponder though: Helicobacter pylori produces histamines, which are indeed amines, so persons with H.pylori populations in their stomachs are probably capable of having nitrosamines form. H. pylori thrives on ethanol, by the way. So drinking alcohol and eating nitrited foods does not look like a good combo, hypothetically speaking, of course. Joan
