Hello. It was an interesting article. I follow the A diet and when faced with a choice of ham or turkey, I'll still choose the turkey. (fresh sliced turkey - not Oscar Mayer) Nitrites "may" not be that bad. In general, if you "have" to eat cured meats because of spoilage reasons, maybe this information will put some people at ease. Lets say when camping. But, in the modern society, in which most of us live, the motto "eat nothing that will not spoil, but eat it before it does" is still good reasoning.
