I do not know about stomach acidity, though ginger is a traditional remedy for nausea. However, ginger thins the blood. A small amount will actively thin blood for several days. As a consequence, it is a good idea to avoid ginger a week before surgery. Ginger is reported to help avoid blood clots, possibly minimizing possibility of strokes. I once ate a great deal of crystallized ginger and little blood spots showed under my skin on my shoulders and arms, lasted for several hours. Don't make that mistake!!!!!
