flours

I've been in Seattle for the last few days visiting my family and discovered a great place to buy flour. Manna Mills located just north of the intersection of 220th and 66th in Mount Lake Terrace has a wide variety of flours including some I had not heard of previously. One example is Teff, a grain from the Nile region. It has a great nutty taste. Does anyone know if it is ok for type A people. At any rate the people at Manna Mills are very helpful and if you are in the Pacific Northwest you should take time to visit their store.
