Dear Mary, The potato is a staple of the modern Irish diet, but this is relatively recent, as it was introduced into Ireland from America in the 1500's. The reason it is so prevalent in Ireland now is that it grows well in the Irish climate. It is not a traditional Celtic food in an anthropologic "O" sense. Peter
