Dear K. Baske, 1. Gluten-free/ germ free bread would probably be acceptable in a type O with no problems with insulin resistance (ie weight, hypoglycemia, etc.). They are still better just being wheat-free though. 2. Soy cheese with casein can be used by type O in small amounts, again depending on the circumstances. Peter
