I have a son who is allergic to corn. He actually gets what appears to be a diabetic reaction to it. He can consume cane sugar with not ill effects. I am looking for a substitute for corn syrup to use in a marshmallow frosting recipe which he loves. I would guess that simply heating the sugar to a clear state and then adding some canola oil might work but I'm just guessing. Any ideas? I understand his is not an unusual condition so I'm sure others would benefit from the info. Thanks for your input!
