Since I can't eat grains anymore, rolling it in cornmeal and frying just isn't an option for me, but I've found it does *very* well in the microwave, just a minute or so, don't microwave it to death. It doesn't seem to be so slimey when it's microwaved. If you can buy it fresh (or grow it yourself), then get the smaller pods and eat them whole. *Don't* cut it up, eat the whole pod. It's the cutting that makes it slimey. Yes, you eat the seeds and it's truly great pickled (dill-pickled). Of course, it's traditonally used in gumbo to thicken it, where the slimyness isn't noticeable.
