Use the whole pod with the exceptions of the cap. The seeds are great. If you do the "fry" thing, (YUM) the seeds are the best. I find that I have to wipe my knife off several times when chopping okra to rid the slime. I also find that if I know my source (i.e. my organic garden), I don't wash it. Washing seems to make it slimier. You've made my mouth water for okra and it is the dead of winter here! Let me know how it turns out.
