Hi Rosie,
I'm from the Southeastern US and if you boil okra it will be incredibly slimey. The way to prepare okra as a vegetable without the sliminess is to fry it. Yep, That's right fry it. Just slice it up and use a compliant flour and a little oil on low-medium heat add some salt but don't overcook or it will be mush.Typically okra is fried using corn meal where i'm from, but you can use flour.enjoy
