Spelt looks and tastes much like wheat and can be used the same way. It actually has more gluten in it than wheat, I understand, but it doesn't have the problematic lectin wheat contains. They say it is a very old form of wheat that was developed prior to many of the hybrids we see today. You probably can get it at health/natural food stores in your area or find it online at one of the search engines.
