so first I'll talk about how to buy it.

That said, if you are gluten sensitive (celiac) you may want to avoid all gluten grains (even sprouted) while you are following this diet and healing what are probably the lectin-damaged tissues of your gut. The reason I say avoid even sprouted gluten grain is, commercial manna/essene bread makers may not be terribly finicky about whether there is a little unsprouted grain in the flour. If you are celiac, this is a risk you probably don't want to take.
