Simple "O" meal ideas needed...

Hi there, Robin! Beautiful name :-)

I understand that depression can mean daily tasks are very difficult to accomplish.

Basic "O" meal: red meat, greens, sweet potato
Basic "O" snack: handful walnuts or pumpkin seeds, carrot juice or grapefruit juice or banana
Basic "O" drinks: mineral/seltzer water, green tea, water

Get a nice beef roast and cook it on the weekend. Use slices of this roast all week long for meals: breakfast, lunch, dinner - doesn't matter the time of day.

Greens: kale, spinach, collard greens, chard, beet greens, etc. Wash and chop these greens. Heat some oil in a skillet on medium-low (maybe add crushed garlic if you like it) - add the greens and toss them unti they are coated in the oil. Turn the heat down to low and add a bit of water, put a lid on the skillet and let the greens steam for a while. Add more water as needed. Alternatively, buy a package of frozen greens and use package directions to cook.

Sweet potato: scrub it, toss it in the oven at 350 deg. F for 40-60 minutes depending on size. Put some butter or ghee on the cut sweet potato--maybe a dash of clove spice if you'd like.

Rice: cook up 2 cups of rice per package instructions in pot with tight fitting lid (I always use EXTRA water so it does not burn!). Keep the rice in freezer bags, if you'd like, so cooked rice will always be at hand.

Another Basic "O" Meal: steak, mashed sweet potato, spinach salad

Steak: Sirloin is good or whatever you have. Throw the steak and some 100% black cherry juice into a ziplock bag. Put the bag in the refrigerator over night. Drain the steak. Rub some spice into the steak if you'd like (I can give you some good dry rub recipes to have on hand). Place steak on broiling rack and broil for 5 minutes (this is for a steak over 1" thick). Turn steak over and broil second side for 4-5 minutes.

Mashed sweet potato: peel the sweet potato. Cut into 1 or 2" chunks. Add sweet potato chunks to good sized pot. Add water to cover the sweet potato. Bring water to boil - and allow to boil until the sweet potato is soft when pricked with a fork. You really cannot over cook this - just add water if you aren't sure. Drain sweet potato chunks. Add some butter or ghee and mash the sweet potato. (One sweet potato makes a WHOLE BUNCH so this is a feast for the eyes when you are starving).

Pre-packaged organic baby spinach leaf is easiest because it has been "triple washed" already. With the triple washed you can simply rinse the spinach. A regular head of spinach can be cut and put into a big bowl of water - swirl the spinach around and then lift it out of the bowl. You will see sand on the bottom of the bowl. Rinse the spinach really well. Tear into pieces, place into salad bowl and squeeze some lemon over it. Finally drizzle with olive oil and add some salt.

Hard boiled eggs: these keep in the fridge for a week and are easy to prepare ahead of time. Bring water to boil in a big pot. Turn the heat off. Using a big spoon, carefully lower each egg into the hot water. Leave the heat off. Place a lid over the pot. Let the eggs sit in hot water for 45 minutes. Remov the eggs from the water. Place eggs in cold water to cool them quickly. Try one to make sure it's cooked :-) then place the rest in the fridge for a quick easy/ meal/snack.

Fish: place fish filet on baking pan, spritz with a little lemon, drizzle some olive oil on top and bake for 10-15 minutes or until it flakes easily with a fork. Alternatively, use canned sardines "brisling" packed in water, also canned tuna with ingredients of just tuna/water/salt or canned mackerel packed in water. You can try mashing your sardines in with your sweet potato. For tuna, drizzle some oil on top and add salt if desired.
