While I can't help you with finding Essene bread in the UK, I think I can offer some suggestions as to the second issue.
What you are experiencing is probably detoxification, and it sounds like you went cold turkey. Going cold trukey off all the junk is great, but can make detox worse in the short-term. All the junk that you have been eating over the years is trying to leave your body, and it is doing so rather rapidly. Mostly it will just take time to clear it out, but drinking lots of water will help, too. Pineapple juice might be another thing that can help clear out the toxins. Also, making sure that you are taking some good multivitamins and supporting yourself nutritionally is important. Get more sleep, too!
I suffered from headaches daily for years and years, and it took about three weeks before they stopped once I stopped eating wheat and dairy. It WILL go away soon, and you will be so amazed at how different (good!) you feel. Meanwhile, you are changing the chemistry of your entire body, and it takes time.
You may also want to consider eating some of the things you used to eat all the time and slowly easing off them so that your body isn't as shocked by the dietary changes.
