Ever seen his cooking show? He successfully uses extra virgin olive oil in most of his cooking including frying and stirfrying. He has a restaurant in NYC, I believe. There is a brand, "Bertolli", that produces an "extra light" olive oil that has a higher smoke point than regular olive oil. Walnut oil in my area costs about the same as good olive oil. It seems to take medium high cooking temps nicely.
