Collard greens. What are they?

Some of the raves and recipes make them sound so delicious. I gather they are bunches of mixed, salady type leaves. I'd love to try some. I can't get enough green leafies but have no idea what kind and whether we can get them in Australia. Can they be grown in a home garden? I've also always wondered what hominy grits are.
