It's a nifty little book that I picked up the other day, with a wealth of
info. I learned a lot of 'details' that I never knew before.
I highly reccommend it to all 'A's & 'AB's. (Both the book & the soy! *L*)
For instance...researchers found a new phytoestrogen in soy called Equol.
It is similar to the natural estrogen, estradiol-17.
They later found 'high' levels of Equol in the urine of Japanese men
& women consuming the traditional Asian diet, notably rich in soy.
In other studies they found, 'low' levels of Equol in women with breast cancer, as opposed cancer-free women.
Isoflavones, genistein, daidzein, protease inhibitors, phytic acid,& saponins,
are all compounds that are contained in soy, that have a beneficial effect
in either preventing, inhibiting, or reducing cancer.
Then there's the beneficial protection against heart disease & osteoporosis.
How can we afford 'not' to eat soy??!!
