To sweeten my almond milk I use 1 T maple syrup.
I also use 1/2 cup almonds to 2 cups water.
My husband doesn't mind if they are blanched or not.
For plain milk it is best to use blanched but for smoothies it doesn't matter.
A good smoothy is 1 1/2 to 2 cups almond milk, 2 frozen bananas and 5 dates. Instead of dates you could use a frozen peach.
Another good use for almond milk is take Ezekial 4:9 bread and soak it in the milk and then cook it like french toast. You can also add nutmeg and cinnamon to your milk to give the french toast an even yummier taste. O's can't have those.
Have fun experimenting. kathy
